Coconut Rice/ Thengai Sadham


Coconut Rice

Ingredients

Rice - 1 cup 
Urad dal(white) - 1/4 cup 
Grated Coconut- 1/2 cup 
Ghee -  1 tsp 
Salt to taste

To Temper

Coconut Oil - 2 tbsp
Mustard - 1 tsp
Asafoetida- a pinch
Red Chillies - 2
Channa dhal - 1 tsp
Curry leaves - 1 string

Method:

1. Soak rice for 15 mins and Cook rice in a pressure cooker with 1:2 ratio for 3 whistles

2. Soak urad dal for 20 mins and drain the water

3. In a pan add oil and temper with the items given under the ‘To temper’ roasted urad dal and channal dhal till it becomes light brown.



4. Add coconut and stir for 2 minutes 



5. Add salt and add rice and mix well.
